Chaga grows on birch trees in cold northern forests and has been brewed as a forest 'tea' in Siberia and Scandinavia for centuries. Its dark, earthy brew is a lovely coffee alternative.
How to brew: Decoction: simmer 1 tbsp chunks in 4 cups of water, covered, for 1–2 hours until deep brown. Strain; chunks can be reused 2–3 times.
Taste: earthy, vanilla-like, smooth
